Smashed Potatoes With Garlic

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Sea salt
  • 1 teaspoon rosemary leaves, chopped
  • 1 teaspoon chives, chopped
  • Black pepper


  • Step 1

    Preheat the oven to 220°C (grill settings). In a large pot of cooking water, cook potatoes until soft, about 15 minutes. Drain well.

  • Step 2

    Place the potatoes onto a baking sheet lined with parchment paper. Use a potato masher, the end of a glass or the palm of your hand and gently smash the potatoes until flattened.

  • Step 3

    Mix together olive oil and pressed garlic and pour the mixture over each potato. Sprinkle with sea salt, black pepper, rosemary leaves and chopped chives.

  • Step 4

    Grill in the oven until the potatoes are gold and crisp, about 10-15 minutes.
