Sweet Potato Hummus Toast with Berries and Nuts

  • 1 slice bread, toasted
  • 1 purple sweet potato
  • 1/3 cup drained chickpeas
  • Toppings: walnuts, blueberries, goji berries, cocoa nobs, mulberries, peanut butter, cocoa powder


  • Step 1

    Preheat the oven top 350℉. Place the sweet potato onto a pan and bake for 45 minutes. Once cooked, remove the potato skin and place the sweet potato into a food processor. Blend it with the chickpeas.

  • Step 2

    Next, spread the sweet potato hummus onto your bread. Add your favorite toppings of choice.
