"craving vibrant. 🧡 ... so I’m sharing this sunshine citrus salsa i made a few weeks back to make today as radiant as possible. ✨☀️✨ used super juicy sumos’ and paired them with creamy avocados, seedy paleo crackers, crunchy cukes, chickpeas, and, a little pinch of t’ joes bagel spice plus flaky salt on top. Sending out big bursts of flavor, vitamin c and much-needed brightness for all of us to soak up right now. 🧡"

ingredients
- 1 avocado
- 1 Sumo orange, or any type of orange
- 2 tablespoons avocado oil
- 1/4 cup red onion, diced
- Sumo orange juice, as needed
- 1 lime, juiced, to taste
- Fresh dill, basil, parsley or other fresh herbs, roughly chopped
- Salt, as needed
- Black pepper, as needed
- Jalapeño, optional
Method
Step 1
Roughly chop the avocado and Sumo orange into bite size chunks and mix together in a small bowl with the onion and herbs.
Step 2
Drizzle in the olive oil along with a few squeezes of sumo and lime juice.
Step 3
Season with salt & pepper to taste. Marinate for 10-15 min. devour!
Step 4
*option to add some diced jalapeño for a little kick.
