Prosciutto and Zucchini Breakfast Bowl

"brunch over easy!!! ... plus prosciutto, because we’re still having a moment and i just couldn’t help myself. i fried up an organic egg real quick with a little olive oil, then added some zucchini to the pan & gave it a good char! tossed it together with some avocado, fresh arugula (the peppery notes add awesome balance to the savory ingredients which i love) hemp seeds and a little dill. finished with lemon, black pepper, and a big pinch of YUM! #hanmadebyhg #brunch #eggs"

These savory breakfast bowl is filled with bright, crisp arugula, runny egg, and creamy avocado and prosciutto. Sautéed zucchini brings this meal together for a healthy and satisfying morning meal or simple lunch.

  • 1 egg
  • 1 zucchini, sliced
  • 1 avocado, sliced
  • 1 cup arugula
  • oil, for frying
  • dill, to garnish
  • hemp seeds, to garnish
  • 3-6 slices prosciutto
  • salt and pepper, to taste


  • Step 1

    In a small pan, heat oil and fry egg sunny side up. Remove from pan and sauté zucchini until done.

  • Step 2

    Assemble the bowl. Top arugula with egg, prosciutto, zucchini, and avocado. Season with salt and pepper. Garnish with dill, hemp seeds, and lemon juice if desired.
