To make coconut whipped cream, chill a can of unsweetened coconut milk over night in the fridge. When ready to make, add the solid contents of can to a stand mixer (save the liquid for smoothies,etc.) fitted with a whisk attachment. Beat until light and fluffy. Add 2 tbsp of powdered sugar and 1 tsp vanilla for flavor. (optional)
