"Indian tea is typically prepared with tea leaves sourced from the north-eastern parts of India viz. Assam, Darjeeling and certain parts of Meghalaya. The leaves are then boiled in water, sugar, milk and spices (optional) to provide a refreshing hot beverage, enough to stimulate your senses and get you going! This recipe is a classic that you will find in almost every Indian home."

ingredients

  • 2 teaspoons Indian black tea leaves
  • 2-3 teaspoons sugar
  • 1 teaspoon freshly grated ginger
  • 2-3 cardamom pods
  • 1/2 cup milk

Method

  • Step 1

    In a small pot, combine tea leaves, sugar, ginger, cardamom and 2 cups water over medium-high. Bring to a rolling boil, then reduce to simmer and add the milk. Let boil again, over low flame.

  • Step 2

    Pour into serving cups or glasses using a strainer.
