Fruit and Nut Granola

ingredients

  • 4 cups rolled oats
  • 1 1/2 cups mixed nuts, and/or seeds
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 cup melted virgin coconut oil
  • 1/2 cup maple syrup, or honey
  • 1 teaspoon vanilla extract
  • 2/3 cup dried fruit, cranberries, raisins etc

Method

  • Step 1

    Preheat oven to 350ºF. Add oats, nuts/seeds, cinnamon, and salt to a bowl. Pour in oil, maple syrup, and vanilla extract. Mix well.

  • Step 2

    Spread evenly on a baking sheet and bake for around 22-23 minutes, until light golden brown. Stir the granola slightly halfway through baking and lightly press it together to form clumps.

  • Step 3

    Remove from oven and let cool on wire rack for a few hours or overnight. Once completely cooled, break into clusters and mix in dried fruit. Store in an airtight container at room temperature for about 2 weeks.
