Ingredients

Filling5 apples, sliced with the skins on 4 pears, sliced with skins off1-2 cups cranberries2 cups water2 large pieces of ginger, sliced with skins off1/2 cup coconut sugar, could use honey or agave3 tbsp arrowroot

Crumble1 cup gluten free oats, like Bob's Red Mill1 cup gluten free flour 6 tbsp non-dairy margarine, like Earth Balance's soy-free 2 tbsp coconut oil2 tbsp coconut sugar or honeya sprinkle of cinnamon

DirectionsPre heat Oven to 400 degrees.

FillingPlaced sliced pears and apples in a medium casserole dish and set aside. In a small sauce pot bring cranberries, ginger and water to a boil, lower the heat and let simmer for 10 min.Add 1/2 cup coconut sugar, stir until dissolved.Remove ginger from the pot and add arrowroot a bit at a time, whisking or stirring until dissolved. Mixture should thicken.Pour cranberry mixture over the apples and pears.CrumbleIn a medium bowl combine oats, flour, coconut sugar, and cinnamon.Add the margarine, and incorporate into the dry mixture using a fork to create crumbles.Add coconut oil, and incorporate using a fork until all ingredients are combine.Sprinkle crumble pieces over the apple and pears, making sure to cover as much of the surface.Bake for 30 minutes or until the crumble begins to brown.
