Taiwanese Corn and Ham Buns

ingredients

  • 200 gram full fat or low fat milk
  • 4 gram dry active yeast
  • 360 gram all purpose or bread flour
  • 40 gram cake flour
  • 80 gram white sugar
  • 4 gram salt
  • 1 each egg
  • 1 each egg wash
  • 40 gram softened butter
  • 100 gram canned corn
  • 1/2 cup diced ham
  • 50 gram mayo
  • 1 tsp basil, oregano, or thyme
  • salt and pepper

Method

  • Step 1

    Combine all of the bread ingredients together except butter and mix well. About 5 minutes.

  • Step 2

    Add butter and knead for additional 5 minutes. Let it rest for 2 - 2 1/2 hour.

  • Step 3

    Punch dough down, and knead each bun (60g) into circles. Rest 10 more minutes with damp towel covered over it.

  • Step 4

    Mix the filling ingredients together.

  • Step 5

    Make a dent in the center of the bun and fill with corn and ham mixture and brush the bun with egg wash.

  • Step 6

    Place in oven with lights on and let it rise for another 50-55 minutes.

  • Step 7

    Bake for 20-25 minutes or golden brown on the outside at 360 degrees.

  • Step 8

    Rest for 5 minutes and enjoy!
