Taiwanese Corn and Ham Buns

ingredients
- 200 gram full fat or low fat milk
- 4 gram dry active yeast
- 360 gram all purpose or bread flour
- 40 gram cake flour
- 80 gram white sugar
- 4 gram salt
- 1 each egg
- 1 each egg wash
- 40 gram softened butter
- 100 gram canned corn
- 1/2 cup diced ham
- 50 gram mayo
- 1 tsp basil, oregano, or thyme
- salt and pepper
Method
Step 1
Combine all of the bread ingredients together except butter and mix well. About 5 minutes.
Step 2
Add butter and knead for additional 5 minutes. Let it rest for 2 - 2 1/2 hour.
Step 3
Punch dough down, and knead each bun (60g) into circles. Rest 10 more minutes with damp towel covered over it.
Step 4
Mix the filling ingredients together.
Step 5
Make a dent in the center of the bun and fill with corn and ham mixture and brush the bun with egg wash.
Step 6
Place in oven with lights on and let it rise for another 50-55 minutes.
Step 7
Bake for 20-25 minutes or golden brown on the outside at 360 degrees.
Step 8
Rest for 5 minutes and enjoy!
