Roasted Okra

INGREDIENTS
1 pound okra, rinsed and dried throughly
2-3 tablespoons extra virgin olive oil
1 tablespoon smoked paprika
1 tablespoon kosher salt
Freshly cracked black pepper


DIRECTIONS
Preheat the oven to 450 degrees.

Trim the stem ends and the tips off the okra, and then place the okra in a large bowl. Toss with the olive oil, paprika and salt until well coated. Place on a sheet pan in one layer.

Roast in the oven for 15-20 minutes, stopping after 7 minutes to shake and turn the pan. The okra should be lightly browned and tender.

Remove from the oven, and toss with black pepper and more slat if desired. Serve immediately.
