Tex Mex Stuffed Peppers

  • 300 gram uncooked lean organic ground beef
  • 100 gram diced white onion
  • 3 medium raw bell peppers
  • 1/2 cup strained tomatoes
  • 1 tbsp Old El Paso spicy taco seasoning
  • 100 gram frozen corn
  • 20 gram grated Monterrey Jack Cheese
  • 120 gram sliced Hass Avocado
  • 9 sliced grape tomatoes


  • Step 1

    Spray a pan with avocado oil on medium heat.

  • Step 2

    Add onions and sauté for 1 minute. Add ground beef and break up clumps. Sauté for 10-12 minutes.

  • Step 3

    Wash, core, and cut bell peppers in halves. Place in air fryer for 10 minutes at 375 F.

  • Step 4

    Add taco seasoning, corn, and strained tomatoes to ground beef and continue cooking for 5-6 minutes.

  • Step 5

    Remove peppers from air fryer and fill with beef. Top with cheese and put in air fryer for 1-2 minutes (until cheese is melted).

  • Step 6

    Plate and serve with avocado, sliced grape tomatoes, and lime. Enjoy!
