Samphire Meze with Beet Yogurt

ingredients
- 2 bunches samphire
- 1 cup Turkish Yoğurt
- 1 cloves finely grated garlic
- 2 tablespoon juice of beetroot
- 6 tablespoon extra virgin olive oil
- 5 coriander flowers
- 1 clove sliced thin garlic
Method
Step 1
Give samphire a good wash before cooking to remove any sand or dirt that may be attached.. Leave the stems on. The only way you can remove the flesh from the stems is to leave the roots intact.
Step 2
Bring a big pot of water to a boil. Blanch the samphire for 6-10 minutes with roots and stalks on. Refresh in cold ice water. Hold the end of the roots and pull. The flesh will separate from the stalks. Place in a bowl and add lemon juice.
Step 3
Mix yogurt , garlic and beet juice in a bowl until you have a bright pink color. Spread the yogurt on a serving dish. Add samphire leaves on top. Drizzle olive oil.Decorate with sliced garlic and coriander flowers.
