ingredients

  • 1 large beetroot, scrubbed
  • 4 fresh meyer lemons
  • zest of one lemon
  • 4 1/4 cups water
  • 2 cardamom pods
  • fresh mint leaves
  • 2 tablespoons honey

Method

  • Step 1

    Peel the beetroot and cut it into small chunks. Squeeze the juices of 4 lemons.

  • Step 2

    Add beetroot and water in a blender and blend it until smooth.

  • Step 3

    Strain the pulp and add the remaining juice in a jug. Add crushed cardamom pods , honey, lemon juice and zest. Stir well.

  • Step 4

    Serve with ice and fresh mint leaves.
