Beet Lemonade with Honey & Cardamom

ingredients
- 1 large beetroot, scrubbed
- 4 fresh meyer lemons
- zest of one lemon
- 4 1/4 cups water
- 2 cardamom pods
- fresh mint leaves
- 2 tablespoons honey
Method
Step 1
Peel the beetroot and cut it into small chunks. Squeeze the juices of 4 lemons.
Step 2
Add beetroot and water in a blender and blend it until smooth.
Step 3
Strain the pulp and add the remaining juice in a jug. Add crushed cardamom pods , honey, lemon juice and zest. Stir well.
Step 4
Serve with ice and fresh mint leaves.
