Strawberry Chocolate Chip Oat Bars

  • 2 Strawberry Chocolate Chip LÄRABAR® Bars, diced into ½-inch cubes
  • 2 cups rolled oats
  • 2 cups oat flour
  • 3 tablespoons chia and flaxseed blend, divided
  • 2 tablespoons organic brown coconut sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 banana, mashed
  • 3/4 cup unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1 1/2 cups strawberries, diced and muddled
  • 1 tablespoon unsweetened coconut shreds


  • Step 1

    Preheat oven to 350˚F and line an 11x17-inch baking pan with parchment paper.

  • Step 2

    Mix together Strawberry Chocolate Chip LÄRABAR® Bar pieces, rolled oats, oat flour, 2 tablespoons of chia and flaxseed blend, coconut sugar, baking powder, cinnamon, salt, and cocoa powder in a large bowl

  • Step 3

    Mix banana, almond milk, and maple syrup in a small bowl.

  • Step 4

    Add wet ingredients to dry ingredients and stir until combined.

  • Step 5

    Smooth mixture into the prepared baking pan, and add strawberries on top. Sprinkle the remaining 1 tbsp. of chia and flaxseed and coconut shreds and bake for 20-25 minutes.

  • Step 6

    Remove from the oven and let cool on a baking rack. Once cooled, cut into pieces and enjoy!
