Almond Tart with Creamy Almond Milk Filling

Almond Tart is one of my favourite desserts! 😍This is a variation of my usual recipe that I’ve decided to share as part of @thefeedfeedand @CaliforniaAlmonds#almondmilkallways challenge. It’s gluten, dairy and soy free and I hope you like it

For the crust

ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/3 cup sugar
  • 2 tablespoons ground flax seeds
  • 1/2 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the crust

Method

  • Step 1

    In a bowl, combine almond flour, coconut flour and sugar.

  • Step 2

    Separately, combine flax seeds with 1/2 cup water. Mix in vanilla and oil, and whisk vigorously until the mixture thickens slightly, about 5 minutes. Add wet ingredients to dry ingredients and mix until a soft dough forms. Press and shape dough into a lined 8-inch tart pan.

For the almond milk filling

ingredients

  • 1 cup almond flour
  • 1/3 cup sugar
  • 2 tablespoons corn starch
  • 1/4 cup almond milk
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract

For the almond milk filling

  • Step 1

    Preheat oven to 350°F.

  • Step 2

    Add all ingredients to a bowl and stir with a whisk until thick and evenly combined.

  • Step 3

    Spread mixture into prepared tart shell and bake at 350°F for 35-40 minutes. Cool completely.

For the almond cream

ingredients

  • 1/2 cup almond milk
  • 2 teaspoons corn starch
  • 1 teaspoon vanilla
  • 2 tablespoons sugar

For the almond cream:

  • Step 1

    In a saucepan over low heat, add almond milk, corn starch, vanilla extract and sugar. Place on low heat and whisk continuously until mixture thickens but can be poured. Cool slightly and spread on tart.
