- 1 tablespoon olive oil
- 2 eggs
- 1/ 2 cup sliced mushrooms
- 1 slice of cinnamon raisin bread, toasted
- 1/ 2 small avocado, thinly sliced
- Handful of berries
- Hot Sauce, to taste
- Dill, for garnish
- Salt and Pepper, to taste
In a skillet heat one tablespoon of olive oil and fry the eggs until the whites have just set and the yolks are still runny. Remove from pan.
Add mushrooms and sauté until golden brown. Season with salt and pepper and serve with toasted bread, sliced avocado, and berries. Garnish with dill and drizzle hot sauce as desired.
