ingredients
Brown Sugar Cookies
- 6 1/3 tablespoons (90g) unsalted butter, room temperature
- 3/4 cup (150g) light brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/3 cups (160g) all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt

Twix Topping
- 1/2 cup salted caramel sauce (store bought or homemade)
- 1 cup (170g) semi-sweet chocolate chips
- 1 teaspoon vegetable oil
Method
Brown Sugar Cookies:
Step 1
Preheat the oven to 350°F. Line a cookie sheet with parchment paper or use a silicone baking mat.
Step 2
With a hand mixer or a stand mixer fitted with the paddle attachment, beat together the butter and brown sugar until the mixture is light and fluffy (2-3 min).
Step 3
Beat in the egg and vanilla until well combined.
Step 4
Add in the flour, baking powder, and salt. Use a rubber spatula to fold the ingredients together just until no flour streaks remain.
Step 5
Cover the dough and refrigerate for at least 30 minutes, or up to 2 days.
Step 6
Use a 3 tablespoon sized cookie scoop to scoop out the cookies onto the prepared cookie sheet. Evenly space the cookies apart to allow room for spreading. Bake for 10-12 minutes, until the sides of the cookies start to turn golden brown.
Step 7
Immediately after taking the cookies out of the oven, you can use a bowl slightly larger than the cookies to swirl around over them to make them a little more uniform and circular.
Step 8
Use the bottom of a pinch bowl or a shot glass (approximately 2-3 inches) to indent the center of each cookie while they are still warm.
Twix Topping:
Step 1
Place 1 tablespoon of salted caramel sauce in the center of each cookie, then freeze the cookies for 10 minutes to let the caramel harden a little bit.
Step 2
In a small bowl, melt together the chocolate chips and vegetable oil. Put the chocolate in the microwave for 30-second intervals, stirring before putting it back in the microwave.
Step 3
Top the caramel with the melted chocolate and some sea salt flakes if desired.
Step 4
Allow time for the chocolate to harden (this can be sped up by placing them in the fridge), then serve.
