Apple Compote and Sweet Quinoa Parfait

Recipe Card

ingredients

  • 1 cup full fat coconut milk
  • 1 cup water
  • 7 ounces uncooked quinoa
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 teaspoons maple syrup
  • 2 apples
  • 1 pear
  • 1 teaspoon cinnamon

Method

  • Step 1

    Rinse quinoa well under running water, add it to a pot along with coconut milk and water

  • Step 2

    Add salt, vanilla and cinnamon

  • Step 3

    Bring to a boil and then let it simmer at medium heat for 10-15 minutes

  • Step 4

    Once the quinoa is soft, turn the stove off and let the quinoa steam off. Let it cool off

  • Step 5

    Peel apples and pears and cut them in small slices, put them in a pot along with some water and cinnamon

  • Step 6

    Let them simmer for approx. 5-10 minutes until the fruits are soft. Let it cool off

  • Step 7

    Add the quinoa into a glass, yogurt on top, then the fruit puree, then the compote and serve with nut puree
