ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup raw almonds
  • 1/4 cup maple syrup
  • 1 tablespoon ground chia or flax seeds
  • 2 tablepoons coconut oil
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/4 cup cacao nibs (or sub with mini chocolate chips)
  • 50 grams 85% cocoa chocolate, optional

Method

  • Step 1

    Place all ingredients except cacao nibs and chocolate into a food processor and process until very small pieces are formed and mixture sticks together when you press it between two fingers. Scrape mixture into a bowl and using a stiff spatula, fold in cacao nibs (or mini chocolate chips if using). If your appliance makes the dough warm, it will be sticky, but as it cools it will become less sticky and easier to work with. Dough will still be very thick!

  • Step 2

    Cover a baking sheet with parchment paper. Using a 1.5-Tbs measuring spoon, or just smaller than a golf ball, scoop mixture out and roll between your hands. Place on the baking tray. Keep going until all mixture is used up! Place tray in freezer for around 20 minutes.

  • Step 3

    While the tray is chilling, if you want a chocolate glaze (delicious without it too!), place chopped chocolate into a small glass bowl. Microwave for increments of 15 seconds, stirring after each 15 seconds until chocolate is completely melted.

  • Step 4

    Once the balls have been in the freezer for 20 minutes you can take them out. Drizzle with the melted chocolate or roll them around in the chocolate to completely cover and place back on baking sheet. You can leave some without chocolate glaze too! Place tray back in freezer for 10 minutes for chocolate to harden and then place in sealable container and store in the fridge. These last for about 5 days (but mine never last that long!). Enjoy!
