ingredients

  • 1 package phyllo dough
  • 1 bunch spinach
  • 1 package goat cheese
  • 1 Jar roasted red peppers
  • 1 small onion
  • 1/2 bulb garlic
  • 1 package butter

Method

  • Step 1

    Preheat oven to 400F

  • Step 2

    Wash spinach throughly under cool water. Shake out all excess water and pat dry.

  • Step 3

    Add finely chopped onions to skillet till they sweat. Then add finely chopped garlic they both become golden brown.

  • Step 4

    Add spinach to the skillet and wilt it down. Make sure onion and garlic don't burn. Remove from gas and set aside to cool.

  • Step 5

    Mix in goat cheese and roasted red peppers to spinach mixture. Add salt and pepper to taste.

  • Step 6

    Cut phyllo dough into long rectangular strips. Keep unused phyllo dough under a damp cloth between prep.

  • Step 7

    Scoop spinach, goat cheese and roasted red pepper mixture in the top right corner of the phyllo dough. Make sure it's a triangle shape. Brush melted butter along the entire strip.

  • Step 8

    Fold phyllo dough in the direction of the mixture. Keep doing so until you reach the end, then wrap it up to ensure no loose ends.

  • Step 9

    Brush butter on top of the spanakopita and sprinkle oregano on top.

  • Step 10

    Place in middle rack of oven for 15 minutes, or until there is a nice golden layer.
