1 cup sugar
1 cup pomegranate juice
1 tbsp lemon juice
6 apples, peeled
1 bottle champagne or prosecco
1 vanilla bean, split lengthwise
handful cardamom pods
1 whole star anise
Coconut yogurt, for serving
Combine sugar, pomegranate juice and lemon juice in a medium pot and set over medium heat and bring to a boil. Cook for about 3 minutes.
Carefully add the remaining ingredients to the pot , adding water to cover the apples if they are not fully submerged. Bring to a simmer and cook for about 10 minutes, or until the apples are tender.
Set apples aside to cool, then further reduce cooking liquid, cooking for an additional 10 minutes. Strain poaching liquid, discarding spices.
Add poached pears to coconut yogurt, drizzle with a a bit of the poaching liquid and enjoy!
