Vegan Tofu Pancakes

I hope you have some space in your stomach left for those delicious, fluffy vegan pancakes. Not only tofu gives them amazing texture but it’s also a protein source making them super nutritious. And they are ready in just a few minutes. So what toppings are you adding to yours?"

ingredients

  • 7 ounces silken tofu
  • 1 cup flour
  • 3/4 cup almond milk
  • 1/2 tablepoons baking powder
  • 1 pinch of salt
  • 1 teaspoon lemon juice
  • 1/3 teaspoon cinnamon
  • 1 pinch of nutmeg, optional
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons sugar, or stevia

Method

  • Step 1

    Place the dry ingredients in a large bowl and whisk to combine.

  • Step 2

    Place silken tofu in a blender together with a bit of plant based milk, lemon juice and vanilla extract and blend until the batter becomes smooth and quite thick. Don’t add all the milk at once but gradually pour some during blending to make sure that you get the right consistency.

  • Step 3

    Create a well in the middle of the bowl with flour and pour the tofu mixture to it. Mix well until you get a thick batter.

  • Step 4

    Heat a large pan and pour some oil. When hot pour the pancake batter (use a serving spoon to make sure that they are even in size). Fry for 1-2mins then flip and cook for 1-2mins more until lightly browned. Serve hot with your chosen toppings.
