It takes me back to a dish my dad used to make and call it 'camarones a la diabla' πŸ™Š and when I tried the authentic 'camarones a la diabla' they couldn't be further from my dad's version, but still...this is a favorite of mine and I know you'll love it too."

ingredients

  • 1 pound shrimp, peeled and deveined, save the shells
  • 1 teaspoon paprika
  • 1 teaspoon seasoned salt
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup whole milk
  • 2 cups seafood stock
  • 2 tablespoons chipotle in adobo
  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 1 shallot, chopped
  • salt, to taste
  • pepper, to taste
  • 1 teaspoon crushed red peppers
  • 2 tablespoons chives
  • 2 tablespoons cilantro

For the stock

ingredients

  • shrimp shells
  • 2 cups vegetable scraps, onions leeks tomatoes garlic parsley carrots celery
  • 1 bay leaf
  • 1 chile de arbol
  • 1/3 cup white wine
  • 3 cups water
  • black peppercorns
  • salt

Stock

Method

  • Step 1

    SautΓ© your veggies for stock with shells for 5 min. Deglaze with white wine and reduce by half. Add in the rest of the spices and water. Bring to a boil and simmer covered for as long as you can.

  • Step 2

    Season your shrimp with paprika and seasoned salt. Sear your shrimp for 1 minute per side on a very hot pan. Put on a bowl to rest.

  • Step 3

    Melt your butter with the flour, add in oregano, shallots and cook for 2-3 min. Add in tomato paste and chipotle. Cook for 2 min. Add in milk and seafood stock. Bring to a boil so it thickens, if you need more add more stock.

  • Step 4

    Add in shrimp with the juices it collected in bowl. Add in crushed red peppers and herbs. Serve over rice.
