Salmon

ingredients

  • 1/2 cup cooked sushi rice
  • 4 ounces sushi grade salmon
  • 3 teaspoons sesame oil
  • 2 tablespoons tamari
  • 1 1/2 tablespoons rice vinegar
  • 1/2 teaspoon sugar
  • 3 tablespoons chives
  • 1/4 cup Japanese mayo
  • 1/2 avocado, sliced `
  • 1 Persian cucumber, thinly sliced
  • 3 tablespoons sriracha
  • Black sesame seeds

Salmon

Method

  • Step 1

    Mix the salmon with 1 tsp sesame oil, 3 tbsp chives, 1/2 tbsp rice vin and 1 tbsp tamari.

  • Step 2

    Mix the japanese mayo, sriracha, 2 tsp sesame oil, 1 tbsp rice vinegar, sugar & 1 tbsp tamari.

  • Step 3

    Using a ring mold start by adding your rice, cucumber, avocado & the salmon last. Press it gently with your fingers so it doesn’t fall apart. Carefully lift ring mold.

  • Step 4

    Using a smaller ring mold, top the stack and pour the sauce for dramatic effect…add black sesame seeds, serrano pepper, chives and my optional sauce.

ingredients

  • 1 tablespoon tamari
  • 1 serrano pepper, chopped
  • 2 tablespoons scallions
  • 1/2 lemon
  • 1/2 orange

  • Step 1

    Mix all ingredients to combine.
