- 2 Potatoes
- 2 Yams
- 18 Cherry Tomatoes
- 1 clove Garlic
- 1 teaspoo Coconut Sugar
- To Taste Basil
- To Taste Sea Salt
- To Taste Black Pepper
- To Taste Extra Virgin Olive Oil
Method
Step 1
Healthy Fries: - Pre-heat the oven at 400°F. - Wash the potatoes and cut into rectangular sticks - Put them in a large bowl and season with extra-virgin olive oil, sea salt and pepper. Toss/Mix together. - Prepare a tray with baking paper and drizzle with a little bit of extra-virgin olive oil. - Add the fries to the tray and oven-bake for 30min with the fan setting on.
Step 2
Homemade Italian Ketchup: - Finely chop the garlic and dice the cherry tomatoes. - Add extra-virgin olive oil to a pan and stir fry the garlic and the cherry tomatoes. - Season with sea salt and black pepper. - Once the cherry tomatoes are half cooked add 1 teaspoon of coconut sugar and keep stirring at medium heat until they are completely cooked and mashed. - Add some freshly chopped basil at the end.
