  • Bamboo sushi mat (wrapped in plastic wrap to prevent sticking)
  • Sharp knife
  • Small bowl of water (for dipping fingers and knife)
  • Plastic wrap (optional, for inside-out rolls)

  • 1 1/2 cups short-grain sushi rice, rinsed
  • 1/4 cup rice vinegar, gently warmed
  • 4 teaspoons granulated sugar
  • 1 teaspoon kosher salt

Spicy Tuna Sushi Roll:

  • 5 -6 sheets nori (seaweed)
  • 1/2 pound sushi-grade tuna, chopped
  • 2 tablespoons sriracha
  • 1 tablespoon sesame oil
  • 1 green onion, finely chopped
  • 1 cucumber, sliced into thin matchsticks
  • Sliced avocado, for topping
  • Toasted sesame seeds, for topping

Method

To prepare the rice:

  • Step 1

    Cook rice according to package directions (or in a rice cooker).

  • Step 2

    In a small bowl, combine warm rice vinegar, sugar, and salt until dissolved.

  • Step 3

    Gently fold into hot rice and let cool to room temperature before using.

Assembly Tips:

  • Step 1

    Marinate the tuna in the sriracha, sesame oil, and sliced green onion for 10-15 minutes.

  • Step 2

    Lay the bamboo mat on a clean surface and place a sheet of nori shiny side down.

  • Step 3

    Wet your hands and gently press a thin, even layer of rice onto the nori, leaving a 1-inch border at the top.

  • Step 4

    Lay your marinated tuna and cucumber in a horizontal line across the center.

  • Step 5

    Use the bamboo mat to roll the sushi away from you, pressing firmly but gently to keep everything tight.

  • Step 6

    Seal the edge with a little water.

  • Step 7

    Slice with a sharp, damp knife.

  • Step 8

    Top with avocado, sesame seeds, or spicy mayo if desired.
