We will take any excuse to eat cookies for breakfast. These chewy chocolate chip oatmeal cookies are made with bananas, peanut butter, and completely vegan and gluten free.

ingredients
- 3 bananas, mashed
- 2 cups quick oats
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1/4 teaspoon baking soda
- Pinch of salt
- Add-ins: chocolate chips, raisins, seeds etc.
Method
Step 1
Preheat oven to 180C degrees and line a baking sheet with parchment paper. Combine quick oats, salt and baking soda.
Step 2
Mix all the ingredients together and scoop into balls. Arrange over the sheet and flatten with a spoon. Bake for 15-18 minutes or until golden brown.
