Strawberry Bubble Milkshake

ingredients

  • 60 grams strawberry purée
  • 2 tablespoons sugar
  • 60 grams tapioca starch
  • 1 teaspoon red beet powder

Method

  • Step 1

    Add the remaining tapioca starch and knead until a smooth and elastic dough.

  • Step 2

    Divide into small pieces and roll them into small pearls. (7-8mm) Place them into a bowl with a little tapioca starch and toss to coat.

  • Step 3

    Bring a pot of water to boil. Add the tapioca pearls and cook for 15minutes, stirring occasionally. Turn off the heat, cover with a lid and let them sit for 15 minutes. Rinse with cold water, drain and place the pearls in a bowl with 1 tbsp agar or maple syrup to avoid sticking.

Milkshake

ingredients

  • 2 cups plant milk
  • 1/2 cup strawberry purée
  • Chopped strawberries

  • Step 1

    Blend milk and strawberry purée until frothy (I use an immersion blender). Add chopped strawberries and mix to combine. Add 2-3 tbsp of tapioca pearls to a jar or glass, add ice cubes and add the strawberry milkshake on top. Enjoy!
