Parsnip and Leek Pancakes
Throwback to these Gluten free- vegan Parsnip and Leek pancake that I made with cabbage, yellow beets and carrots today. Crunchy, spicy and addictive. They are versatile, and this combo is delicious. You could substitute it with spiralized beet, purple yam, purple cabbage, sweet potato, zucchini in this recipe. Use any spring veggie of your choice. Makes for a great snack or a light lunch over a bed of salad. Add eggs for the extra protein if you like.
