ingredients
- 1 eggplant
- 1/2 tablespoon juice of lime
- a pinch of cumin
- 2 leaves mint
- 3 tablespoons olive oil
- 3/4 cup feta cheese
- To Taste Salt and black pepper
- Mint, for garnish
- Sunflower seeds, for garnish
- Basil, for garnish
- Pomegranate, for garnish
- Chili flakes, for garnish
- Microgreens, for garnish
Method
Step 1
Preheat oven to 350ºF.
Step 2
Rinse and dry the eggplant. Place on a baking sheet and bake for 45-60 minutes, or until completely tender.
Step 3
Let cool, peel the skin from the eggplant and discard. Add all ingredients to food processor and blend until smooth and creamy.
Step 4
Serve with desired toppings, olive oil and crusty bread.
