ingredients

  • 2 small sweet potatoes, thinly sliced
  • 4 eggs
  • Olive oil, as needed
  • red pepper flakes, to taste
  • salt and freshly ground black pepper
  • handful chopped cilantro
  • 1 jalapeño, sliced

Method

  • Step 1

    Heat a bit of oil in a medium frying pan and add the sweet potatoes and season with salt and pepper.  Cook until tender and slightly brown on one side, then flip and form into two roses by overlapping the slices in a circle.

  • Step 2

    Crack on egg into the center of each rose and cook until egg is set, about 2-3 minutes. 

  • Step 3

    Sprinkle with cilantro, red pepper flakes and jalapeños and serve.
