ingredients
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/2 onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon amchoor (dried mango) powder, optional
- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil, divided
- 1 12-ounce package Cascadian Farms Organic Hearty Blend with Brown Rice, Corn, Black Beans and Red Bell Pepper
- 2 tablespoons cilantro, chopped, divided
- 1/2 lime, juiced, divided
- 3 tablespoons aji amarillo paste, optional
- 1 tablespoon honey, optional
Method
Step 1
Preheat oven to 425°F.
Step 2
Combine salt, pepper, cinnamon, onion powder, cumin, garlic powder, paprika and anchor powder (if using).
Step 3
Place chicken on parchment-lined baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with spice blend. Bake for 20 to 22 minutes, or until internal temperature reaches 165°F. During the last 2-3 minutes of cooking, remove parchment paper and return to oven on broil until chicken is golden and crisp. Let rest for about 5 minutes before serving.
Step 4
While chicken is cooking, prepare rice blend. Add remaining 1 tablespoon olive to a skillet over medium heat. Add Cascadian Farms Organic Hearty Blend with Brown Rice, Corn, Black Beans and Red Bell Pepper, cover, and cook for 4 minutes, uncovering to stir occasionally. Add 1 tablespoon cilantro and lime juice, stir. Cover and continue cooking for 3 to 6 minutes. Remove from heat, uncovered, until ready to serve.
Step 5
Stir together aji amarillo and honey, if using.
Step 6
To serve, slice chicken and place over rice blend. Drizzle with honey aji amarillo hot sauce, if using and remaining cilantro.
