Duck Egg, Hen Egg And Fresh Indian Coriander Chutney

RECIPE:

Boil the eggs for 4 1/2 minutes. Run under cold water, peel and halve.

Coriander chutney
Large bunch of fresh coriander
Medium bunch of fresh mint
1 small hot green chilli
Handful of pistachios
Juice and zest of 1 lemon
1 or 2 lugs of good olive oil
Water to loosen

In a small food processor whizz all the chutney ingredients until smooth, scrape down sides once or twice and add a little water to get it to a 'loose hummus' texture. Store in a jamjar in the fridge, with a thin layer of oil on top for up to one week.

Also delicious on chicken, burgers, curries, salads or sandwiches.
