"Every time I eat bhel puri I love it even more than the last! It's so full of flavor and different textures and can be eaten as a snack or as dinner. It's a mix of puffed rice, fried lentils, peanuts, papdi, potatoes, onions, yogurt, tamarind sauce and green chutney and then a mix of dry spices sprinkled on top"
Bhel Puri Cones

Makes 2 servings
1 cup puffed rice
1/4 c whole skin on peanuts
1/4 c fried lentils/fried chickpeas
1/4 c sev (fried chickpea flour vermicelli)
1/4 boiled potatoes diced
1/4 chopped red onion
Mix the above in a bowl.
Get some indian newspaper from your local ethnic store and fold into a cone. Fill with bhel puri mix and drizzle with plain yogurt, coriander and mint chutney and tamarind sauce.
Sprinkle some salt, turmeric, garam masala, chilli powder and dry roasted ground cumin on top. Top with cilantro leaves, add a fork and voila, you have a bhel puri cone :)
