Figs With Cashew Cream

RECIPE:

1 cup (2,4dl) cashews (soaked overnight)
1tbsp lemon juice
2 soft dates,
1 tbsp water

Instructions
Place the soaked cashews in a food processor or high speed blender and blend until smooth. Add lemon juice, dates and water and blend until completely smooth. Pour the mixture into a bowl and cool it down for 10 minutes in the fridge. Now you have cashew cream!

Eat with: whatever you want! I love the flavor comination with figs.
