Annie’s also uses certified organic ingredients which is important to me and my family! I picked mine up at the Merc, the local Co-op here in Lawrence. This recipe combines two family favorites, tacos and mac and cheese! This mac and cheese recipe is uses mushrooms, onions and bell peppers but feel free to sneak in extra veggies.

Recipe Card


  • 1 tablespoon avocado oil
  • 1/2 white onion, diced
  • 1 bell pepper, diced
  • 8 ounces mushrooms, minced
  • 1 (6 ounce) box Annie's Organic Shells & Real Aged Cheddar Mac & Cheese
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 1 (1 ounce) packet taco seasoning
  • 1 (10 ounce) can diced tomatoes with green chiles


  • Step 1

    Heat oil in large sauté or cast iron pan, then add diced onion, pepper, and mushrooms. Sauté until soft.

  • Step 2

    While veggies cook, bring six cups of water to a boil in a medium saucepan. Add pasta to boiling water and cook per box instructions.

  • Step 3

    Season veggies once the onions become translucent by stirring in taco seasoning, then turn off heat.

  • Step 4

    When pasta is cooked, strain. Add butter, milk, and cheese packet to the empty saucepan and stir to combine.

  • Step 5

    Add pasta back to the saucepan, stir to coat pasta with cheese sauce. Add seasoned veggies and diced tomatoes to mac & cheese, stirring until everything is well distributed. Enjoy!
