Yield: Serves or Makes 4 servings
Preheat oven to 350F.
In a skillet over medium heat, add olive oil and sauté onion, garlic, mushrooms and cherry tomatoes until cooked, about 7-10 minutes. Then add shrimp, Italian seasoning, salt and pepper, and sauté until cooked, about 4-5 minutes.
Stir in almond milk, cooked pasta, and spinach.
Place in baking dish, and top with shredded parmesan and mozzarella. Bake for 15 minutes or until cheese melts.
