ingredients

  • 2 large eggs
  • 2 tablespoon oil
  • 2 slices gluten free sourdough, toasted
  • 1 tablespoon garlic ghee
  • 1 avocado, mashed
  • 2 tablespoon goat cheese
  • 2 tablespoon spinach
  • 1 teaspoon hemp seeds
  • salt and pepper, to taste

Method

  • Step 1

    Heat oil in a fry-pan over medium-high heat. Crack eggs into the pan and fry for 3-5 minutes. Spoon hot oil from the pan onto the egg yolk to speed up the cooking time. Once cooked, transfer the eggs to a plate.

  • Step 2

    Add ghee to the hot pan and toast the bread on the stovetop for 1-2 minutes on each side.

  • Step 3

    To assemble, place the toast onto a plate. Top with mashed avocados, goat cheese, spinach, the fried egg, a sprinkle of hemp seeds, salt and pepper.
