She uses Annie's Organic Shiitake & Sesame Vinaigrette for a quick and easy dressing for the noddles and all the toppings.

ingredients
- 1 box (8 ounces) soba noodles
- 1/3 cup Annie's Organic Shiitake & Sesame Vinaigrette
- Vegetable oil, for frying
- 6 large cremini mushrooms, thinly sliced
- 1 1/2 cups sliced purple cabbage
- 1 cup shelled edamame
- 1/2 cup green onion, diced
- 3 tablespoons sesame seeds
- 4 mandarin oranges, peeled and segmented
- 1 red pepper, thinly sliced
- 1 lime, juiced
Method
Step 1
Cook soba noodles according to package, rinse and let cool. Then, toss with Annie's Organic Shiitake & Sesame Vinaigrette.
Step 2
In a skillet, heat some oil over medium-high heat and saute mushrooms until softened, 3-5 minutes.
Step 3
To assemble, top noodles with mushrooms, purple cabbage, edamame, green onions, sesame seeds, mandarin oranges, red pepper and lime juice.
