Onion Pumpkin Pizza with Goat Cheese

ingredients
- 1 batch pizza dough (enough for 1 crust)
- 1/2 red onion, chopped
- Salt, to taste
- 1 garlic clove, minced
- 2 tablespoon olive oil
- Half 14 oz can pumpkin puree
- 1 cup arugula
- 1/2 cup goat cheese
- 2 tablespoon pine nuts
- 1 tablespoon honey
- 1/2 tablespoon balsamic vinegar
Method
Step 1
Preheat the oven to 375℉. Spread pizza dough into an 8”-10” circle on a parchment paper lined baking sheet. Par-bake for 8-10 minutes.
Step 2
Meanwhile, heat oil in a pan over medium heat. Add red onion, salt and garlic. Saute for 5-8 minutes until onions have softened.
Step 3
Remove half of the onion mixture from the pan and set aside for later. To the leftover onion mixture (in the pan) add pumpkin puree. Mix and saute for another 3-5 minutes.
Step 4
Spread the pumpkin-onion mixture over the par-baked pizza crust. Sprinkle the reserved onions over the pumpkin puree. Top with arugula, goat cheese and a sprinkle of pine nuts. Drizzle with honey and balsamic vinegar.
Step 5
Bake for another 8-10 minutes or until the edges are crispy.
