Almond Milk And Spinach Scrambled Eggs

  • 1-2 tbsp almond milk (depending on your desired consistency of the eggs)
  • 2 eggs
  • 1 large handful of leafy greens
  • 1 1/2 tablespoon Greek yogurt (I used Fage)
  • 2 slices of bread
  • Salt and pepper, to taste


  • Step 1

    Crack eggs into a bowl; add almond milk and a pinch of salt and pepper. Whisk until all ingredients are melded and one consistent color. This should be a pale-yellow color.

    Heat up a pan to sauté spinach.

  • Step 3

    Begin toasting your bread, so that it will be ready in time for your eggs.

  • Step 4

    Add oil to heated pan. Add greens to pan and sauté with salt and pepper to taste.

    Once spinach begins to wilt, add the egg mixture. Keep the mixture moving in the pan in order for even cooking.

    Take toast out of toaster, spread on Greek yogurt, salt and pepper to taste, top with almond milk and spinach scrambled eggs.
