Three Bean Chili

  • 4 tablespoons avocado oil
  • 2 teaspoons cumin
  • 2 teaspoons garlic powder
  • 3 teaspoons paprika
  • 2 white onions
  • 2 red and orange bell peppers
  • 2 can black beans
  • 1 can kidney beans
  • 1 can pinto beans
  • 1 can diced tomatoes
  • 1/2 cup frozen corn
  • 2 pinches salt


  • Step 1

    Dice the onion and the peppers, set aside.

  • Step 2

    Turn the instant pot onto sauté mode and add all the spices and the oil

  • Step 3

    Once the instant pot is nice and hot the spices are sizzling add the onions and peppers. Sauté for about 3-5 minutes. Once the veggies are softened turn off sauté mode by pushing the cancel button.

  • Step 4

    Drain & rinse the beans. Add them to the instant pot. Next add the tin of tomatoes, corn, water & salt.

  • Step 5

    Stir it all together. Push the manual button and set to 5 minutes. Release pressure! Serve up!!
