ingredients

  • 1 tablespoon flaxseeds
  • 1 tablespoon chia seeds
  • 2 cups paleo flour (bobs red mill)
  • 1/2 cup super fine almond flour
  • 1/2 cup coconut sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/2 cup almond butter
  • 1/2 cup maple sugar
  • 3/4 cup coconut oil / ghee, melted
  • 2 cups finely grated carrots
  • 1 apple, finely grated
  • 4 eggs
  • 1 tablespoon vanilla

Method

  • Step 1

    Preheat the oven to 375˚ F and line a 9 by 5 inch loaf pan with parchment paper. In a large bowl combine all the dry ingredients. In a separate bowl combine all the wet ingredients

  • Step 2

    Slowing add the wet ingredients to the dry ingredients and mix until they are thoroughly blended into a nice consistent batter.

  • Step 3

    Bake for about 60 minutes, then let cool before slicing.
