Sourdough Toast with Avocado and a Fried Egg

"Always + forever the GOAT (greatest of all time, FYI mom). My most favorite working lunch to make is a piece of sourdough, avocado, and a fried egg because it’s EASY and QUICK. Yes, I like to style my bowls pretty but in reality, all of my meals come together in less than 5 minutes. I just prep ahead (overnight oats, chia pudding) and then add toppings in the morning, or make a quick bowl of oats/fry up an egg and I’m done. It doesn’t have to be complicated to taste good and satisfy you, right?! I added a little feta cheese, hemp seeds, and red pepper flakes to this one!"

ingredients

  • 1 slice sourdough bread, toasted
  • 1 avocado, sliced
  • 1 large egg
  • 2 tablespoon olive oil
  • sprinkle of crumbled feta cheese
  • sprinkle of salt
  • crushed red pepper flakes

Method

  • Step 1

    To make the fried egg, heat oil in a non-stick skillet over medium heat.

  • Step 2

    Once hot, crack the egg into the oil. Let cook 2-3 minutes, and spoon the hot oil onto the egg white to cook it faster.

  • Step 3

    Meanwhile, place the sliced avocado onto the toasted sourdough bread.

  • Step 4

    Top the avocado with the fried egg, crumbled feta cheese, a sprinkle of salt and crushed red pepper flakes.
