For the Streusel Topping
ingredients
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 1/4 cup softened butter
For the Muffins
ingredients
- 1 cup all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup sugar
- 1/2 cup greek yogurt
- 1/4 cup flavorless oil
- 1 teaspoon vanilla extract
- 1 cup raspberries
Make the Streusel Topping
Method
Step 1
Preheat the oven to 375℉ and line a 12-count muffin pan with paper cupcake liners.
Step 2
In a medium bowl, whisk together the topping ingredients until it forms a crumble mixture. Set aside.
Make the Muffins
Step 1
In a medium bowl, whisk together the eggs, sugar, greek yogurt, oil, and vanilla extract until well combined.
Step 2
In a large bowl, whisk together the flour, baking powder, and salt. Dump the liquid ingredients into the dry mixture and mix until just combined.
Step 3
Fill the muffin cavities halfway and top with fresh raspberries. Slightly push down the raspberries. Bake for 20 minutes or until a toothpick inserted into the center until it comes out clean.
