Lemon Poppy Muffins

  • 2 lemons
  • 2 eggs
  • 1 stick butter
  • 6 ounces container lemon yogurt
  • 1/3 cup sour cream
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoon poppy seeds
  • 1/4 teaspoon salt
  • 2/3 sugar
  • 1 teaspoon vanilla extract


  • Step 1

    Preheat oven at 400 degrees F.

  • Step 2

    Zest one lemon and juice both. Set aside. Mix dry ingredients together. Mix wet ingredients together. Whisk both together till just combined. Portion out in your muffin tin. This batch will make 6 larger style muffins. Bake for 20-24 minutes or until a cake tester comes out clean.

  • Step 3

    I like to use the Parchment paper lotus style cups for these muffins. If you space them out on the muffin tin it allows room for the muffins to grow giving them that bigger bakery effect muffin.
