A Note from Feedfeed

 Nothing says summer better than S'mores! Each spoonful of this trifle is filled with fudgy chocolate, graham cracker bits and marshmallow! Make these a day or two ahead and keep them stashed in the fridge for a quick sweet treat!

ingredients

  • 3 heaping tablespoons arrowroot powder
  • 1/2 cup coconut sugar
  • 1 (13.5 ounce) can full fat coconut milk
  • 1/2 cup non-dairy milk
  • 2 teaspoons vanilla extract
  • 2 cups all natural vegan marshmallows, divided
  • 4 1/2 ounces whipped coconut cream
  • chocolate chips, for topping
  • chocolate bar pieces, for topping
  • Annie's Organic Honey Bunny Grahams , for layering to taste

Method

  • Step 1

    In a small bowl whisk together the arrowroot powder and coconut sugar.

  • Step 2

    In a medium saucepan, whisk together the nondairy milk, and full fat canned coconut milk on medium heat. Slowly add the dry ingredients and whisk to combine. Whisking constantly to prevent clumps from forming.

  • Step 3

    Bring to a slow boil over medium heat while whisking.

  • Step 4

    Turn the heat down to low and let the pudding simmer for a few minutes, whisking frequently, or until the pudding is slightly thickened. Keep in mind it will also thicken in the refrigerator. Remove from heat and whisk in the vanilla extract and marshmallows. Alternative: You may also melt down the marshmallows slightly beforehand if you prefer it to be fully incorporated versus having marshmallows roam free in the pudding.

  • Step 5

    Transfer to a large bowl, cover and refrigerate for a couple hours or until fully cooled

  • Step 6

    Once cooled whisk in the coconut whipped cream to create a better consistency for the trifle jars.

  • Step 7

    While you layer your mason jars, place extra marshmallows for topping in small mounds on a parchment paper layered pan, place in oven and broil until toasted

  • Step 8

    Layer the jars like so - pudding, crushed graham bunnies, chocolate chips, pudding, crushed graham bunnies, chocolate chips

  • Step 9

    Using a spatula place the toasted marshmallow on top of each jar, add extra chocolate and graham to taste. ENJOY!
