Check out this Cranberry Pork! I stuffed it with my homemade dried cranberries, goat cheese & pecans. It’s so festive and delicious! You have to make this for the holidays. It also is great to feed a crowd. Enjoy!!

ingredients
- 1 pork loin filet
- 3/4 cup dried cranberries
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped pecans
Spice Mixture
ingredients
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1/4 teaspoon dry mustard
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
Cranberry Topping (optional)
ingredients
- 1/2 cup dried cranberries
- 2 tablespoons water
- 3 tablespoons honey
Method
Step 1
Preheat the oven to 425 degrees.
Step 2
Butterfly the pork so you can stuff it.
Step 3
Add the cranberries then goat cheese & pecans.
Step 4
Wrap up and secure with kitchen twine.
Step 5
Place pork on a greased cookie sheet and rub the spice mixture onto the pork.
Step 6
Bake for 45 minutes or until the internal temperature reaches at least 145 degrees.
Step 7
Optional: add cranberry topping with fresh thyme & sage after its baked.
