Ingredients:
1/4 cup beets, chopped
1/4 cup gold potatoes, chopped
1/4 cup carrots, chopped
@drpraegers Carrot Puffs
1/2 cup black beans
1/2 cup cooked brown rice
1 cup spinach
1 tablespoon tahini
Fresh parsley
Method:
Place beets, potatoes, and carrots on a baking sheet. Bake at 400F for 35-45 minutes, until tender. Prepare Carrot Puffs according to directions.
Place black beans, rice, and spinach in a bowl. Top with beets, potatoes, carrots, and Carrot Puffs. Drizzle with tahini and parsley!
