- 1 block firm tofu, crumbled
- 1 cup mushrooms, sliced
- 1 teaspoons turmeric
- 2 teaspoons tahini
- 2 teaspoons tamari
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 3 tablespoons nutritional yeast
- 1/3 cup veggie stock
- salt and pepper
- handful of spinach
- taco shells, black beans, kale, or roasted sweet potatoes, for topping (optional)
Add tofu, mushroom, and dry spices to a pan and fry for 1 - 2 minutes, add the remaining ingredients besides spinach and cook for a further 5 minutes adding spinach 30 seconds before serving.
Add scramble to taco shells along with black beans, kale, and roasted sweet potatoes.
